About the Role The F&B Controller is responsible for controlling, monitoring, and optimizing all Food & Beverage costs across outlets, banquets, and events, ensuring adherence to The Leela’s financial standards, internal controls, and profitability objectives. Responsibilities Cost Control & Financial Management Monitor and control food, beverage, and operating costs across all F&B outlets. Analyze daily, weekly, and monthly F&B cost reports, identifying variances and recommending corrective actions. Ensure accurate calculation of food cost %, beverage cost %, and gross profit margins. Review recipes, standard portion sizes, and menu engineering for cost efficiency. Inventory & Stores Management Supervise receiving, storage, and issuing procedures in line with hotel SOPs.
